With only one artisan bearing the title of "麺匠" (Noodle Master) at Marugame Seimen, a position deemed the pinnacle among the 1,491 udon artisans nationwide (as of October 2023), the world of noodle craftsmanship is undoubtedly exclusive. Among these skilled artisans, only five hold the prestigious "二つ星" (Two Stars) designation, while none have achieved the "三つ星" (Three Stars) or "四つ星" (Four Stars) status, illustrating the stringent criteria for this esteemed position.


What, according to the artisan, is the ideal tempura pairing for his 'Kamaage Udon'?

The answer: "いか天" (Squid Tempura).

The artisan explains, "Each tempura complements 'Kamaage Udon' well, but personally, I highly recommend trying 'いか天.' Frying squid is particularly challenging due to its high moisture content." The quality of 'いか天' at Marugame Seimen showcases the skill of each shop, with its consistent, deliciously crispy texture.

In addition, this month features the nationwide "麺匠イベント" (Noodle Master Event), where customers can savor udon crafted by the esteemed "麺匠" at Marugame Seimen stores across the country.
